Hi, needed to make comment on the 'lavender' water. I haven't tried this (or even seen it anywhere here in Australia) but just lately I was at a chocolate tasting with a woman who makes the most delectable home-made chocolates and she had lavender cream chocolates. It was the most delicious thing and weird experience all at the same time. It tastes exactly as it smells!!! No kidding. She infuses the cream with real lavender and then strains the lavender out and makes the ganache for the cream centre. HEAVEN!

I totally know what you're talking about. My friend jamie used to make truffles with lavender ganache too. I gave them to everyone I knew for valentines day. They were incredible. She has also made Lavender ice cream.
