Good Excuse

Crèpes and crèpe parties are really an excuse for me to eat Nutella. Beware though, the American version has trans fats (in the form of partially hydrogenated oil) which the Canadian, Mexican and European versions do not.

Here is my favorite basic crepe recipe:

4 eggs
1 cup flour
1/2 cup milk
1/2 cup water
1/2 teaspoon salt
2 tablespoons melted butter

For Desert Crèpes add 2 tablespoons of sugar to the batter.

Mix this all together until smooth and then set it aside for at least an hour. Makes 12-14 crepes.

I like to make the batter in the morning and let it 'rest' all day in the fridge. And I normally triple the recipe for a party.
